Menu Engineering Model

By | June 23, 2009

Here’s a link to an Excel model I put together to assist with the Menu Engineering process.

MenuEngineeringMenu Engineering Model

The model includes all the formulas to automatically classify your menu items based on popularity & profitability and is easy to use and extend (assuming basic Excel skills).

Plough Horse, I want to understand your note here in the excel sheet. Do you see this as a positive item, negative item. Keep it on the menu or take it off. Tell me your definition to Plough Horse as used here. Thanks.

    Looking forward to more post….

Plough Horse is sometimes called a “Cash Cow”. You have raised some good questions. Stay tuned for a post on this issue.
