The model includes all the formulas to automatically classify your menu items based on popularity & profitability and is easy to use and extend (assuming basic Excel skills).

Plough Horse, I want to understand your note here in the excel sheet. Do you see this as a positive item, negative item. Keep it on the menu or take it off. Tell me your definition to Plough Horse as used here. Thanks.
